Summertime in The Palm Beaches brings us school breaks, holidays, and The Palm Beaches Restaurant Month with delicious prix fixe menus and dining deals. Starting Monday, Aug. 1, The Palm Beaches Restaurant Month welcomes over 130 restaurants into the mix, and an official Restaurant Month cocktail to sweeten the deal. There's nothing better than enjoying the hot weather with a cool, summery drink in hand, so as the weather heats up in The Palm Beaches, cool off with the Restaurant Month’s signature pour: The PB Breeze—a refreshingly tropical mix of Gosling’s Rum, grapefruit juice, sweet vermouth, and fresh lime juice, garnished with a sparkling, edible gold-dusted Luxardo cherry.

In addition, I've curated a delicious list of refreshing summer tipples you won’t want to miss. Filled with the season's freshest ingredients, these cocktails are the epitome of summer in a glass, and you’ll find them in local restaurants from Boca Raton to Jupiter, FL.

At Bar 25, you’ll find a myriad of sharable plates and house-made flatbreads and hardier signature dishes. The cozy gastropub, with Executive Chef Walter Pytel at its helm, is bringing his version of warm and unpretentious, modern American cuisine and inventive craft cocktails to Delray Beach. Behind the bar, the creative craft cocktails compliment the food with such libations as the Florida Smash with Jefferson’s small batch bourbon, Aperol, and passion fruit and From the Garden with Hornito’s reposado tequila, ginger liqueur, and yellow & red peppers.

Grato is a warm, bustling eatery in the Flamingo Park neighborhood of West Palm Beach. Here, James Beard nominated Chef Clay Conley serves up a revolving seasonal menu that extends to the bar. The great three-course menu for Restaurant Month, that includes Conley’s favored ceviche with ají Amarillo, pairs dashingly with his warm weather craft cocktails.

WHAT TO ORDER: Keep those summer vibes strong with the Palm Beach Mai Tai served with Mt. Gay rum, amaretto, and orgeat or bring on the heat with the Spicy Flamingo Margarita blended with Tanteo jalapeno tequila, lime and watermelon.

For the freshest cocktails paired with flavorful small plates, you can’t beat the chic, open air vibes at Avocado Grill. Steps away from the Intracoastal, this hip yet casual bistro, wows with its artisanal menu featuring hand-selected ingredients by award-winning chef, Julien Gremaud.

WHAT TO ORDER: For the best summery vibes, savor their Kiwi Mojito, with fresh kiwi fruit, mint, rum, lime, agave topped with sparkling water or their Chandon Garden Spritz, with fresh Valencia oranges, herbs and spices.

Mizu, Tideline’s in-house sushi restaurant, features the freshest sustainable fish, expertly prepared by Head Sushi Chef Gary Mawu and his seasoned chefs. Grab a cocktail and dine under the palm trees on the oceanside terrace or sit indoors at their sleek sushi bar.

WHAT TO ORDER: Sip on the White Geisha with Junmai Daiginjo sake, vodka, yuzu, lychee and finished with Yamamomo, a Japanese bayberry, and cucumbers, or try a nigori—meaning cloudy in Japanese. It refers to sake that is slightly unfiltered, making it sweeter and smoother.

Get your ‘Breeze’ on with cocktail in hand, as you take in the ocean views and casual seaside fare at Breeze Ocean Kitchen, one of several dining options at the stunning Eau Palm Beach Resort & Spa Property.

WHAT TO ORDER: Bask in the sun while sipping on their signature Strawberry & Mint Smash with gin, fresh strawberries, lemon Juice and mint, topped with sparkling water or the equally refreshing Pineapple Under the Sea with rum, pineapple juice, fresh basil and lime Juice.

This beautiful Mediterranean restaurant by three Michelin star Chef Mauro Colagreco, is the chef’s first eatery in the United States. Here, the focus is on his unique live fire cooking and earth-conscious dishes. Similarly, Florie’s bar, brings the same nature-driven attention to their cocktail program. You’ll revel in drinks that celebrate Florida’s natural bounty with citrus forward and herbaceous selections sourced straight from the resort’s garden.

WHAT TO ORDER: Choose the Begonia with Bulleit Rye, Campari, Carpano Antica, citrus shrub and cold pressed pineapple or the Passiflora, with Vida Mezcal, golden falernum, lime, passion fruit, and agave nectar.

Set in a mid-century styled beach oasis, Chef Lindsay Autry’s new restaurant, Honeybelle, embraces its tropical surroundings at the PGA National Resort, with green pastel umbrellas and vintage brass details. Described by Autry as “fresh Mediterranean with a little of that Southern touch,” you’ll find a charming mix of playful cocktails to compliment the menu.  

WHAT TO ORDER: Indulge in a Lady Bird mixed with Appleton Estate, Campari, Smoked Pineapple, Velvet Falernum, Blended Citrus for a delicious riff on a Jungle Bird or partake in their signature pour, Honeybelle, made with Gosling's Gold Rum, Passionfruit, Lemon, Pineapple, Honey for all the flavors of summer.
